The Holiday Drink – The Method

WHere is an easy version of a drink found on a new drinks list. It's a large-volume premix that's packed full of tastes of the Christmas time, rendering it ideal for hosting a festive gathering. Any leftover syrup to use in breakfast cocktails, sweets, or for additional servings of this cocktail.

The Bikini Cocktail

Makes enough for 10 servings

Ingredients for the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Cocktail (yields 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Method

Making the Cordial: Combine all the ingredients into a saucepan, bring to a simmer, agitating to dissolve. Next, take off the stove and leave to cool down entirely. Decant to a clean bottle, seal and refrigerate it in the refrigerator, where it will keep for around a month.

Preparing the Premix: Mix every spirits and syrup into a sizeable container, leave to sit for 60 minutes, then filter it preferably using muslin, to ensure it's perfectly clear.

When ready to serve: Add 85ml of your premix into your mixing glass containing ice, and stir lightly for a minute to cool it down. Pour into a chilled martini glass or equivalent, decorate with the cranberries and finish by giving it a light spray of the essential oil over the drink.
